Elevate your breakfast with these strawberry cream crepes. This recipe combines tangy cream cheese with sweet Wish Farms strawberries, and will be the star of your brunch!

Ingredients

Crepes

  • 4 Eggs
  • 1 Cup milk
  • 1 Cup water
  • 2 Tablespoons melted butter
  • 2 Cups all-purpose flour
  • 1/4 Teaspoon salt

Filling

  • 1 8 oz Package cream cheese
  • 1 Cup powdered sugar
  • 1 Tablespoon lemon juice
  • 1 Teaspoon lemon juice
  • 1 Teaspoon vanilla extract
  • 3 Cups Wish Farms strawberries, sliced
  • 1 Cup heavy cream

Directions

Strawberry cream filling

  1. In a bowl, beat cream cheese, powdered sugar, vanilla, lemon juice and zest.
  2. In a separate bowl, whip heavy cream until thickened.
  3. Fold in 2 cups of Wish Farms Strawberries and whipped cream.
  4. Place in refrigerator until crepes are ready to assemble.

Crepes

  1. In a bowl, mix together eggs, milk, water, and butter. In a separate bowl, whisk together flour and salt, then add eggs and mix well. Cover and refrigerate for 30 minutes.
  2. Over medium heat, lightly butter a medium-sized pan.
  3. Fill a 1/4 cup halfway with batter, then pour batter in the center of the pan.
  4. Lift pan and tilt so the bottom is coated with batter. Cook until dry (about a minute), then flip and repeat.
  5. Remove crepes from heat.
  6. To assemble crepes, add 3-4 spoons of filling, then add sliced strawberries and roll.
  7. Serve immediately.
