Ingredients
Strawberry Salsa
- Wish Farms Strawberries
- 1/2 red onion
- 1 lime
- 1/4 Cup cilantro
- Salt and pepper
Shrimp Tacos
- Corn or flour tortillas
- 1 lb shrimp, peeled and deveined
- 1 Tablespoon minced garlic
- Taco Seasoning
- 1 Tablespoon of lime juice
Directions
Strawberry Salsa
- Wash and pat dry Wish Farms strawberries.
- Remove tops and chop strawberries.
- Dice onion.
- Finely chop cilantro.
- In a bowl, combine strawberries, onion, and cilantro.
- Squeeze lime juice over salsa.
- Add salt and pepper to taste, then mix and set aside.
Shrimp Tacos
- In a bowl, add shrimp, lime juice, minced garlic, and taco seasoning. Combine until shrimp is fully coated.
- In a medium pan over medium heat, add cooking spray or olive oil.
- Once pan is hot, add shrimp.
- Cook just until shrimp turns pink and opaque (approximately 2 minutes)
- Flip shrimp and repeat.
- Transfer cooked shrimp to bowl.
- Serve tortillas with cooked shrimp, strawberry salsa, and your favorite taco toppings!
