Ingredients
Strawberry Jam
- 4 1/2 cups Strawberries Fresh, Washed and patted dry,
- 1/2 cup Granulated sugar
- 2 tbsp Lemon juice Freshly squeezed
For Peanut Butter Jelly Energy Balls
- 1 cup oats
- 1/2 cup natural peanut butter
- 3 Tablespoons of your jelly mixture
For Decorating
- White chocolate to melt
- Black Icing
- 1 ziplock bag
Directions
For Strawberry Jam

In a food processor, blend strawberries until you have a puree-like consistency.

Pour the mixture into a saucepan and reduce.

Add sugar and lemon juice and mix until combined.

Keep stirring frequently until jam thickens. It should bubble a bit!

Pour jam into a clean jar and let it cool down completely. This jam can last for up to 10 days in the refrigerator.
For Peanut Butter Jelly Energy Balls
- Mix all ingredients together in a bowl until fully incorporated
- Roll into 12 balls.
Dipping & Decorating the Mummies
- Melt white chocolate
- Dip the balls
- Place in refrigerator to cool
- Melt more white chocolate
- Drizzle over the balls using small icing pump/Ziploc bag with tiny cut in corner
- Use black icing to make the eyes
