We teamed up with Wonderful Seedless Lemons to create these delicious lemon blueberry cupcakes. Featuring sweet Wish Farms blueberries, zesty lemon, and tangy cream cheese frosting, these cupcakes are a treat that will surely impress!
Ingredients
- 2 Cupcake Pans
- 24 Cupcake Liners
Lemon Blueberry Cupcakes
- 2 1/2 Cups + 1 Tablespoon all-purpose flour
- 1 1/2 Teaspoons baking powder
- 1/2 Teaspoon baking soda
- 1 Teaspoon salt
- 1 Cup unsalted butter, softened
- 1 Cup granulated sugar
- 3 Tablespoons Wonderful Seedless Lemons Zest
- 3 Eggs (room temperature)
- 1 Cup Whole milk
- 1/3 Cup lemon juice
- 1 Tablespoon vanilla extract
- 1 Cup fresh Wish Farms Blueberries
- 2 Wonderful seedless lemons, sliced then cut into quarters
- Additional Wish Farms Blueberries for garnish
Cream Cheese Frosting
- 1 Cup unsalted butter, softened
- 1 8oz block cream cheese, softened
- 3 Cups powdered sugar
- 1 Tablespoon vanilla extract
- 1/2 Teaspoon salt
Directions
Lemon Blueberry Cupcakes
- Preheat oven to 350 degrees F.
- Prepare cupcake pans with liners.
- In a bowl, combine 2 1/2 Cups flour, baking soda, baking powder, and salt. Whisk until combined.
- In a separate bowl, cream butter, sugar, and lemon zests together using an electric mixer. Beat until fluffy.
- Add vanilla and eggs. Beat again.
- In a container, combine milk and lemon juice and stir until milk curdles.
- Add dry ingredients to wet ingredients while mixing on low speed. Slowly add milk mixture while mixing.
- Toss blueberries in remaining tablespoon of flour.
- Gently fold coated blueberries into batter.
- Bake for 15-20 minutes, or until a toothpick comes out dry after inserted.
- Remove from oven and set aside to cool.
Cream Cheese Frosting
- In a bowl, cream butter and cream cheese together on medium speed for 5 minutes, or until smooth.
- Slowly add in powdered sugar while mixing on low speed.
- Add in salt and vanilla extract, then mix again.
- (optional) Add frosting to piping bag.
Assembling the Cupcakes
- Top cupcakes with frosting, then garnish with blueberries and lemon slices.
- Serve immediately or refrigerate until ready to enjoy.
