Lemon Blueberry Cupcakes

We teamed up with Wonderful Seedless Lemons to create these delicious lemon blueberry cupcakes. Featuring sweet Wish Farms blueberries, zesty lemon, and tangy cream cheese frosting, these cupcakes are a treat that will surely impress!

Ingredients

  • 2 Cupcake Pans
  • 24 Cupcake Liners

Lemon Blueberry Cupcakes

  • 2 1/2 Cups + 1 Tablespoon all-purpose flour
  • 1 1/2 Teaspoons baking powder
  • 1/2 Teaspoon baking soda
  • 1 Teaspoon salt
  • 1 Cup unsalted butter, softened
  • 1 Cup granulated sugar
  • 3 Tablespoons Wonderful Seedless Lemons Zest
  • 3 Eggs (room temperature)
  • 1 Cup Whole milk
  • 1/3 Cup lemon juice
  • 1 Tablespoon vanilla extract
  • 1 Cup fresh Wish Farms Blueberries
  • 2 Wonderful seedless lemons, sliced then cut into quarters
  • Additional Wish Farms Blueberries for garnish

Cream Cheese Frosting

  • 1 Cup unsalted butter, softened
  • 1 8oz block cream cheese, softened
  • 3 Cups powdered sugar
  • 1 Tablespoon vanilla extract
  • 1/2 Teaspoon salt

Directions

Lemon Blueberry Cupcakes

  1. Preheat oven to 350 degrees F.
  2. Prepare cupcake pans with liners.
  3. In a bowl, combine 2 1/2 Cups flour, baking soda, baking powder, and salt. Whisk until combined.
  4. In a separate bowl, cream butter, sugar, and lemon zests together using an electric mixer. Beat until fluffy.
  5. Add vanilla and eggs. Beat again.
  6. In a container, combine milk and lemon juice and stir until milk curdles.
  7. Add dry ingredients to wet ingredients while mixing on low speed. Slowly add milk mixture while mixing.
  8. Toss blueberries in remaining tablespoon of flour.
  9. Gently fold coated blueberries into batter.
  10. Bake for 15-20 minutes, or until a toothpick comes out dry after inserted.
  11. Remove from oven and set aside to cool.

Cream Cheese Frosting

  1. In a bowl, cream butter and cream cheese together on medium speed for 5 minutes, or until smooth.
  2. Slowly add in powdered sugar while mixing on low speed.
  3. Add in salt and vanilla extract, then mix again.
  4. (optional) Add frosting to piping bag.

Assembling the Cupcakes

  1. Top cupcakes with frosting, then garnish with blueberries and lemon slices.
  2. Serve immediately or refrigerate until ready to enjoy.
