Ingredients
Blueberry Jam
- 1 Cup Wish Farms blueberries
- 1/2 Cup sugar
- 1/4 Cup water
- Cornstarch (optional)
Pinwheel pastries
- 1 sheet puff pastry dough
- 6 oz goat cheese
- 1/4 Cup blueberry jam
- 1 Tablespoon fresh thyme
- 1/4 Cup crushed walnuts (plus additional for topping)
- Honey (for drizzling)
Directions
Blueberry Jam
- Rinse and pat dry blueberries.
- In a saucepan, combine blueberries, sugar, and water.
- Cook on medium heat for about 10 minutes or until jam thickens and blueberries are soft. Stir frequently. If jam does not thicken, combine 1 tablespoon of cornstarch with 1 tablespoon of water and stir into mixture until thick.
- Set jam aside to cool.
Pinwheel Pastries
- Preheat oven to 400 degrees F.
- In a bowl, combine goat cheese, blueberry jam, walnuts, and thyme.
- Spread mixture onto puff pastry sheet.
- Slice pastry dough into 9 even-sized strips.
- Roll strips into pinwheel shape.
- Arrange pinwheels on parchment paper-lined baking sheet.
- Top with additional walnuts.
- Bake for 10-15 minutes, or until pastries are golden and fully baked.
- Remove pastries from oven, and let sit for a few minutes, then drizzle with honey.
- Serve warm.
