Ingredients
- Vanilla sheet cake (we used a box mix, but store bought works too)
- Wish Farms strawberries, rinsed, patted dry, and chopped
Whipped Cream Cheese Frosting
- 2 Cups heavy cream, chilled
- 1 Block of cream cheese, softened
- 1 Tsp vanilla extract
- 1 Cup powdered sugar
Strawberry Crunch Topping
- 1 3oz box of strawberry gelatin powder
- 20 vanilla sandwich cookies
- 4 tsp melted butter

- 8 Ramekins
Directions
- Preheat oven to 350 degrees F.
- Prepare vanilla cake according to instructions and bake in a sheet pan (Avoid making the cake too thick, or it will not fit in the ramekins).
- Add heavy cream to a mixing bowl and beat with electric mixer until stiff peaks form.
- Add cream cheese, powdered sugar, and vanilla extract and beat again until smooth.
- Refrigerate frosting until cakes are ready to assemble.
- Add vanilla sandwich cookies to a sandwich bag, do not remove cream from cookies.
- Crush cookies to your desired fineness. (We found that keeping bigger pieces makes for a better crunch).
- Add crushed cookies to a bowl, then add gelatin and melted butter.
- Mix until the cookies and gelatin are both well coated.
- Transfer to a parchment paper lined baking sheet and press mixture down to for even baking.
- Bake for around 8 minutes.
- Set aside to cool, then crush mixture into crumbs.
- Using your ramekins, scoop out cake from sheet pan. Pack cake lightly into ramekin using a spoon.
- Top cake with chopped strawberries and smooth with a spoon.
- Add frosting, then smooth from edge to edge with a knife.
- Dip ramekin in strawberry crunch.
- Serve immediately or refrigerate until ready to enjoy.
