Fall in salad form -this blackberry fall salad combines blackberries, butternut squash, goat cheese, apples, and sweet honey roasted pecans for an unforgettable bite. Ingredients

Blackberry Maple Vinaigrette

  • 1 Cup Wish Farms blackberries
  • 1/3 Cup balsamic vinegar
  • 1/4 Cup olive oil
  • 1 Teaspoon lemon juice
  • 2 Tablespoons maple syrup

Fall Blackberry Salad

  • 1 Butternut squash
  • 1 Teaspoon cinnamon
  • 1/2 Teaspoon salt
  • 1/2 Teaspoon black pepper
  • Mixed greens
  • 1 Apple, chopped
  • 2 Oz Goat cheese
  • 1 Cup Wish Farms blackberries
  • Honey roasted pecans (optional)

Directions

Blackberry Maple Vinaigrette

  1. Rinse Wish Farms blackberries and pat dry.
  2. Add blackberries, balsamic vinegar, olive oil, lemon juice, and maple syrup to blender.
  3. Blend until smooth.

Fall Blackberry Salad

  1. Preheat oven to 400 degrees F.
  2. Peel butternut squash and chop into cubes.
  3. Toss squash in salt, pepper, and cinnamon.
  4. Spread on baking sheet and bake for 25-30 minutes, or until fully cooked.
  5. Remove from oven and let cool.
  6. On a platter or in a bowl, add mixed greens.
  7. Top greens with squash, apples, blackberries, goat cheese, pecans, and dressing.
  8. Serve immediately.
