Vegan Blueberry Date Bites

Ingredients

  • 2 Cups almonds
  • 8 oz Medjool dates, pitted
  • 2 Tablespoons coconut oil, melted
  • 1/2 teaspoon salt (optional)
  • 2 oz dark chocolate, melted
  • 1/2 Cup Wish Farms blueberries, rinsed and patted dry

Directions

  1. Add almonds to a food processor, processing into small pieces.
  2. Add dates, almonds, and salt to food processor, and process until mixture sticks together.
  3. Line a baking dish or cookie sheet with parchment paper.
  4. Add bar mixture to dish, patting down to desired thickness.
  5. Top bars with dark chocolate and blueberries.
  6. Refrigerate for 20 minutes, or until firm.
  7. Remove dish from refrigerator and cut into 12 pieces.
  8. Serve immediately or store in refrigerator for up to 4 days.
