intermediateThis light and fresh vanilla cream berry cake is perfect for a dinner party or birthday celebration. With a fluffy vanilla whipped cream frosting and fresh Wish Farms berries, each bite of this cake is a dream!
Ingredients
Vanilla Cake
- 1 Box vanilla cake mix, prepared according to instructions.
Vanilla Buttercream
- 2 Sticks unsalted butter softened
- 2 Cups powdered sugar
- 1 Teaspoon vanilla extract
- 1/4 Teaspoon salt
Vanilla Whipped Cream
- 1 1/2 Cups heavy cream
- 1/3 Cup powdered sugar
- 1/2 Box vanilla pudding mix
- 1/2 Teaspoon vanilla extract
Cake Filling
- Wish Farms strawberries, chopped
- Wish Farms blueberries
- Wish Farms raspberries
- Wish Farms blackberries
Directions
Vanilla Cake
- Prepare vanilla cake according to box instructions, separating into two 6″ round pans.
- Bake according to instructions.
- Set cake aside and let cool completely.
Vanilla Buttercream
- In a bowl, add softened butter and powdered sugar. Using an electric mixer, beat until smooth and fluffy.
- Add in vanilla extract and salt, and mix again until fully combined.
- Set frosting aside.
Vanilla Whipped Cream
- In a bowl, add heavy cream. Using an electric mixer, beat on medium high until the cream is fluffy and no longer runny.
- Add in powdered sugar and pudding mix. Beat again.
- Add to piping bag and set aside. (optional)
Assembling the cake
- Place one cake layer on plate or turntable.
- Spread vanilla buttercream on first layer, and add Wish Farms berries on top.
- Add second cake layer.
- Spread thin layer of vanilla buttercream on cake to create crumb coat, then allow cake to chill in refrigerator for 10-15 minutes.
- Once cake has been chilled, cover cake in whipped cream frosting.
- Top with Wish Farms berries and sprinkle with powdered sugar.
- Serve immediately, or keep cake refrigerated until ready to serve.
