One-Pan Blueberry Balsamic Baked Salmon

Ingredients

  • 1 cup fresh Wish Farms blueberries
  • 3 to 4 salmon fillets
  • 2 cups brussels sprouts (halved or quartered)
  • 1/4 cup chopped fresh basil
  • 1/4 cup olive oil
  • 3 tablespoon balsamic vinegar
  • 2 cloves of garlic minced
  • crushed black Pepper
  • Sea Salt
  • 2 Lemons, one juiced and one sliced

Directions

  • Preheat oven to 400F
  • Place salmon on a lined sheet pan.
  • Place the cut up brussel sprouts on pan with salmon.
  • Sprinkle sea salt on top of the salmon and veggies to taste.
  • Wash and place your blueberries in a bowl then muddle with a fork or spice grinder.
  • Combine olive oil, salt/pepper, basil, garlic, and balsamic vinegar. Then, add the mixture to blueberries
  • Generously drizzle olive oil over your salmon and Brussels sprouts.
  • Top the salmon with the blueberry balsamic mixture.
  • Squeeze fresh lemon over the dish to preference and place lemon slices on top of veggies on the sheet pan. Sprinkle with black pepper.
  • Place in oven and bake for 15 minutes.
  • Serve and enjoy!
