Raspberry, Coconut and Almond Butter Energy Balls

Need a healthy snack to hold you over? Look no further! These energy balls have all the healthy fat and protein to get you through until the next meal. Best. Snack. Ever.

Ingredients

  • 3/4 cups shredded unsweetened coconut, plus more for coating

  • 1/2 cup fresh Wish Farms raspberries

  • 1/2 cup raw almonds

  • 1/3 cup dates, pitted

  • 1/4 cup almond butter

Directions

  • Add all the ingredients to a food processor

  • Process on high speed until the ingredients are evenly processed and stick together, you might need to stir and mix up a couple times

  • Scoop out approx. 1 tablespoon of the mixture and roll it into a ball using your hands. It gets a little sticky so you might have to rinse off your hands a couple times before rolling another ball

  • Press the ball into the coconut, roll in order to coat all sides

  • Place the ball on a baking sheet lined with parchment paper

  • Place the baking sheet in the refrigerator for 15-20 minutes to harden. Keep refrigerated until ready to eat.
