Patriotic Berry Pie

Ingredients

  • Double crusts for one 9” pie pan
  • 4 cups total of fresh Wish Farms blueberries and blackberries
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon chia seeds
  • 7 tablespoons cornstarch
  • 2 tablespoons butter
  • 1 egg white, beaten with a fork

Directions

  1. Add berries, sugar, lemon juice and chia seeds to a large saucepan over medium heat.
  2. Simmer about 5-10 minutes, gently stirring occasionally. Taste and sweeten if necessary. (Wish Farms berries hardly EVER need extra sugar!)
  3. Remove about 1/2 cup of juice from berry mixture and add to a bowl.
  4. Stir cornstarch into juice until smooth.
  5. Bring pot of berries back to a simmer and slowly pour in the cornstarch mixture.
  6. Gently stir mixture (being careful not to mash the berries), until thickened, about 2-5 minutes.
  7. Repeat above steps if necessary to thicken the mixture more.
  8. Remove from heat and stir in the butter. Use a slotted spoon to grab mixture and place into the unbaked pie shell. Add the amount of juice of your liking.
  9. Cut out stars from the pie crust dedicated to the top.
  10. Carefully add stars on top of the berry mixture.
  11. Brush a thin layer of beaten egg white over the top of the pie and sprinkle lightly with sugar.
  12. Bake at 400 degrees F for 40-45 minutes.
  13. Remove from oven and let cool completely.
