Ingredients
Cream Cheese Layer
- 1 – 14 oz Can Sweetened Condensed Milk
- 1 – 8 oz Package Cream Cheese, room temperature
- 1 Teaspoon Vanilla Extract
- 1 Pinch of Salt
- 1/4 Cup Lemon Juice
- 8 Mini Pre-Made Graham Cracker Pie Crusts
Blueberry Topping
- 1 Pint Wish Farms Blueberries
- 1 Tablespoon Corn Starch
- 2 Tablespoons Lemon Juice
- 1/3 Cup Sugar
- 1 – 16 oz Container of Whipped Topping
Directions
Cream Cheese Layer
- Add sweetened condensed milk, cream cheese, vanilla extract, lemon juice, and salt into a medium bowl.
- Using an electric hand-held or stand mixer, mix the ingredients until well combined.
- Divide the mixture among your pre-made pie crusts and place in the freezer to cool.
Blueberry Topping
- Wash Wish Farms Blueberries with cool water and pat dry. You can use your frozen blueberries for this as well!
- In a small sauce pan over medium heat, whisk together corn starch and lemon juice until their are no lumps in the mixture.
- Add blueberries and sugar to the pan and stir frequently. The mixture should come to a boil and thicken considerably, this may take 10 – 20 minutes.
- Remove from heat and allow the mixture to cool completely before layering over cream cheese layer.
- Top each cheesecake with a dollop of whipped topping, some fresh lemon zest, and a blueberry!
