Ingredients

Blueberry Cookies

  • 1 Stick (1/2 cup) unsalted butter
  • 2/3 Cup granulated sugar
  • 1/2 Cup brown sugar
  • 1 Egg
  • 1 Tablespoon lemon zest
  • 1 Teaspoon lemon juice
  • 1/4 Cup sour cream
  • 2 Cups flour
  • 1 and 1/2 Teaspoons baking powder
  • 1/4 Teaspoon salt
  • 2/3 Cup Wish Farms blueberries, rinsed and patted dry
  • 6 Tablespoons graham cracker crumbs, plus additional for rolling cookies

Cream Cheese Frosting

  • 1 Stick unsalted butter
  • 1 8oz Block cream cheese (softened)
  • 1 Teaspoon vanilla extract
  • Pinch of salt
  • 2-3 Cups powdered sugar

Directions

Blueberry Cookies

  1. Preheat oven to 375 degrees F.
  2. In a bowl, cream together butter and sugars. Once fully combined, add in egg, lemon zest, lemon juice, and sour cream. Mix until smooth.
  3. Mix in flour, baking powder, graham cracker crumbs, and salt until fully combined. Fold Wish Farms blueberries into cookie dough.
  4. Scoop out cookies using a cookie scoop or spoon, and roll dough in graham cracker crumbs before placing them on a parchment paper-lined cookie sheet.
  5. Bake cookies for 12-15 minutes, or until edges are golden brown and cookies are firm.
  6. Remove from oven and let cool while assembling frosting.

Cream Cheese Frosting

  1. In a bowl, beat cream cheese and butter together on high until smooth using an electric mixer.
  2. Lower speed on mixer, and slowly add powdered sugar to the butter and cream cheese. Mix until fluffy.
  3. Once fully combined, add in salt and vanilla extract and mix again.
  4. Add frosting to piping bag (optional)

Assembling the Cookies

  1. Frost cookies, then top with additional graham cracker cookie crumbs, lemon zest, and Wish Farms blueberries. Enjoy!
