It’s that time of year berry lovers! July is National Blueberry Month which means we’re going to celebrate the only way we know how….eating them by the handfuls!

The popularity of blueberries in recent years is undeniable.  Not only are blueberries the perfect ingredient to many recipes, they are also a super-food rich in essential vitamins. With a plentiful amount Vitamin C, blueberries are ranked among the fruits with the highest antioxidant content. Not to mention, they are a naturally sweet treat with only about 80 calories per cup. How could you not love a snack that can satisfy your sweet tooth AND boost your immune system at the same time?!

Only the very best berries make it into your Wish Farms package. After being picked fresh off the plant at our farms the berries are quickly transported to our packing facility. Here, they go through many stages of quality control both by hand and by machine technology to monitor sweetness, texture, and color. Finally, the machines diligently package the best blueberries into each individual container. Now, they’re ready to make their way to your local grocery store!

 

Eating them straight out of the clamshell not your style? Here are some of our favorite recipes to help you incorporate blues into some yummy meals.

 

1. Blueberry Shortcake

This is one of our favorites! A twist on the classic strawberry shortcake but with blueberries instead! Truly indulge in one of the most loved desserts of all time.

Ingredients

  • 1 package of pre-made or store bought biscuits

Blueberry Sauce:

  • 2 cups fresh Wish Farms blueberries (plus 1 and 1/2 cup more for garnish)
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 2 tablespoon lemon juice
  • 2 tablespoon cornstarch

Whipped Cream:

  • 1 1/2 cups heavy whipping cream cold
  • 3 tablespoon granulated sugar

2. Chicken and Waffles with Blueberry Maple Syrup

This recipe may not be the healthiest…..but it sure is worth it! The southern classic has a fruity spin! You will be surprised at how insanely delicious this combo is.

  • Fresh Wish Farms blueberries
  • Pre-made fried chicken tenders (we got ours from the grocery store deli)
  • Waffle mix
  • 1 cup maple syrup

3. Blueberry & Brie Quesadillas 

Lunch is served! These quesadillas are the sweetened version of the classic savory lunchtime staple.

  • 2 large whole wheat tortillas
  • 2 ounces brie cheese, thinly sliced
  • ½ cup fresh Wish Farms blueberries
  • ½ teaspoon honey
  • ¼ teaspoon cinnamon
  • ¼ teaspoon lemon juice
