Ingredients
- 2 cups old-fashioned rolled oats
- 1 teaspoon baking powder
- 1 tablespoon grated orange zest
- 1 ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ¼ cup maple syrup
- ¼ cup honey
- 2 cups milk
- 2 large eggs, lightly beaten
- 4 tablespoons unsalted butter, melted and cooled slightly
- 2 teaspoons vanilla extract
- ½ walnuts, chopped (optional)
- 1 cup Wish Farms strawberries, sliced
- 1 cup Wish Farms blueberries
Directions
- Preheat oven to 375°F and spray a 10-1/2 by 7 inch baking dish with non-stick cooking spray.
- In a large bowl, mix together the oats, baking powder, orange zest, cinnamon, salt, half the walnuts, half the strawberries and half the blueberries. Pour into the baking dish; set aside.
- In a medium bowl, whisk together the maple syrup, honey, milk, egg, butter, and vanilla.
- Pour the liquid ingredients on top of the oat mixture. Evenly scatter the remaining berries and walnuts over the top.
- Bake for 35-40 minutes, until the top is browned. Let casserole cool for 10 minutes before serving.
