Strawberry & Blueberry Oatmeal Casserole

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 tablespoon grated orange zest
  • 1 ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup maple syrup
  • ¼ cup honey
  • 2 cups milk
  • 2 large eggs, lightly beaten
  • 4 tablespoons unsalted butter, melted and cooled slightly
  • 2 teaspoons vanilla extract
  • ½ walnuts, chopped (optional)
  • 1 cup Wish Farms strawberries, sliced
  • 1 cup Wish Farms blueberries

Directions

  • Preheat oven to 375°F and spray a 10-1/2 by 7 inch baking dish with non-stick cooking spray.
  • In a large bowl, mix together the oats, baking powder, orange zest, cinnamon, salt, half the walnuts, half the strawberries and half the blueberries. Pour into the baking dish; set aside.
  • In a medium bowl, whisk together the maple syrup, honey, milk, egg, butter, and vanilla.
  • Pour the liquid ingredients on top of the oat mixture. Evenly scatter the remaining berries and walnuts over the top.
  • Bake for 35-40 minutes, until the top is browned. Let casserole cool for 10 minutes before serving.
