PB & J Raspberry Granola Parfait

Ingredients

Peanut Butter Granola

  • 3 Cups Old Fashioned Oats
  • 1/4 cup peanut butter
  • 1/4 cup honey
  • 1 teaspoon vanilla extract

Raspberry Jam

  • 2 cups Wish Farms Raspberries
  • 1 cup sugar
  • 1 lemon wedge, juiced

Yogurt

  • 3 cups vanilla greek yogurt (or your favorite yogurt choice)

Directions

Peanut Butter Granola

  • Preheat oven to 275 degrees Fahrenheit
  • Combine peanut butter, honey, and vanilla into a bowl
  • Microwave until peanut butter is slightly melted then mix ingredients together
  • Pour the mixture over the oats and combine
  • Evenly lay the peanut butter oats onto a baking sheet
  • Bake for about 20 minutes, stir the granola, then evenly pack it down about bake for an additional 10 minutes
  • Let the granola cool and place in the refrigerator

Raspberry Jam

  • Wash and pat dry the raspberries
  • Muddle the raspberries then pour into a pot on medium heat stirring until they begin to boil
  • Stir in the sugar then the lemon juice
  • Continue to stir and allow the mixture to boil for about 10 minutes
  • Take the pot off the heat and let the jam cool
  • Place in the refrigerator once cooled

Parfait

  • Assemble your parfait in layers: yogurt, jam, granola
  • Top with fresh berries!
