Indian Wild Rice with Pecans and Blueberry

Ingredients

  • 2 cups wild rice blend
  • 3 1/2 cups vegetable or chicken broth
  • 2 oz blended oil
  • 1/2 tbsp chopped garlic
  • 1/4 cup chopped onion
  • 1 tbsp kosher salt
  • 1/2 tsp ground black pepper
  • 8 oz fresh Wish Farms blueberries
  • 4 oz roasted pecans

Directions

  1. Heat the oil in a saucepan over medium heat. Sauté the onion and garlic for 2 minutes, until softened.
  2. Stir in the wild rice blend.
  3. Add the broth, salt, and pepper, and bring to a boil.
  4. Reduce the heat to low, cover, and simmer until the liquid is absorbed, about 15 minutes.
  5. Remove the heat and let the rice rest for 10 minutes.
  6. Fluff the rice with a fork and top with fresh blueberries and roasted pecans before serving.
