Ingredients
- 2 cups wild rice blend
- 3 1/2 cups vegetable or chicken broth
- 2 oz blended oil
- 1/2 tbsp chopped garlic
- 1/4 cup chopped onion
- 1 tbsp kosher salt
- 1/2 tsp ground black pepper
- 8 oz fresh Wish Farms blueberries
- 4 oz roasted pecans
Directions
- Heat the oil in a saucepan over medium heat. Sauté the onion and garlic for 2 minutes, until softened.
- Stir in the wild rice blend.
- Add the broth, salt, and pepper, and bring to a boil.
- Reduce the heat to low, cover, and simmer until the liquid is absorbed, about 15 minutes.
- Remove the heat and let the rice rest for 10 minutes.
- Fluff the rice with a fork and top with fresh blueberries and roasted pecans before serving.
