Herb-Roasted Pork with Fresh Blackberry Compote

Ingredients

Pork Loin

  • 2 lb boneless pork loin
  • 3 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp kosher salt
  • 1 tsp black pepper

Blackberry Compote

  • 2 cups fresh Wish Farms blackberries
  • 1/4 cup raw sugar
  • 1 tsp lemon juice
  • 1/2 tsp kosher salt

Directions

  1. Preheat the oven to 350F
  2. Mix the garlic, rosemary, thyme, salt, and pepper. Rub the mixture all over the pork loin and refrigerate for 2 hours.
  3. Bake the pork until it reaches an internal temperature of 165F. Let it cool slightly before slicing
  4. While the pork cooks, combine the blackberries, sugar, lemon juice, and salt in a saucepan. Let sit for 5 minutes.
  5. Simmer the mixture for 15 minutes, then let it cool.
  6. Slice the pork and serve with the blackberry compote.
