Ingredients
Pork Loin
- 2 lb boneless pork loin
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tbsp kosher salt
- 1 tsp black pepper
Blackberry Compote
- 2 cups fresh Wish Farms blackberries
- 1/4 cup raw sugar
- 1 tsp lemon juice
- 1/2 tsp kosher salt
Directions
- Preheat the oven to 350F
- Mix the garlic, rosemary, thyme, salt, and pepper. Rub the mixture all over the pork loin and refrigerate for 2 hours.
- Bake the pork until it reaches an internal temperature of 165F. Let it cool slightly before slicing
- While the pork cooks, combine the blackberries, sugar, lemon juice, and salt in a saucepan. Let sit for 5 minutes.
- Simmer the mixture for 15 minutes, then let it cool.
- Slice the pork and serve with the blackberry compote.
