These Pineberry Mascarpone Cupcakes bring together soft vanilla cake, creamy mascarpone frosting, and the delicate sweetness of fresh Wish Farms pineberries. Ingredients

Cupcakes

  • Wish Farms Pineberries
  • 2 Eggs
  • 1 ¼ Cups All-Purpose Flour
  • 1 ¼ tsp Baking Powder
  • Dash of Salt
  • ½ Cup Milk
  • ¾ Cup Sugar
  • 2 tsp Vanilla Extract

Whipped Mascarpone Frosting

  • 16 oz of Mascarpone
  • 1/2 Cup of Sugar
  • 1 tsp of Vanilla Extract
  • 2 Cups of Heavy Whipping Cream
  • Sprinkles

Directions

  1. Preheat your oven to 350°F.
  2. Sift together in a bowl the flour, baking powder, and salt, then set aside.
  3. In a separate large bowl, add the softened butter and sugar, then mix until light and fully combined.
  4. Add the eggs one at a time, mixing well after each addition until smooth. Then mix in the vanilla.
  5. Add half of the dry ingredients to the wet mixture and mix until incorporated. Then add half of the milk. Repeat with the remaining dry ingredients and milk, mixing until the batter is smooth.
  6. Line your cupcake tin with cupcake liners and fill each a little more than halfway full so they do not overflow.
  7. Bake for 12 to 15 minutes, or until a toothpick inserted in the center comes out clean.
  8. Remove the cupcakes from the oven and place them on a cooling rack. Let them cool completely before frosting.

Whipped Mascarpone Frosting

  1. Rinse, pat dry, and cut your Wish Farms pineberries, or leave them whole if preferred for garnish.
  2. In a large bowl, combine the heavy cream, mascarpone cheese, sugar, and extracts. Whip until stiff peaks form.
  3. Pipe the frosting onto the cooled cupcakes, then top with sprinkles and pineberries.
