Strawberry Cake Parfait

Directions

1. Rinse strawberries and dice into small pieces.
2. Blend 4-5 strawberries until smooth.
3. Whip heavy cream until soft peaks form, then add in powdered sugar and vanilla extract. Mix until fully combined. Divide in half, and set half of whipped cream aside.
4. Fold in blended strawberries to other half to make strawberry whipped cream. 
5. Spoon a layer of chocolate cake into the bottom of each parfait glass.
6. Add layer of plain whipped cream, followed by a layer of diced strawberries.
7. Top with strawberry whipped cream and garnish with fresh strawberries.
8. Serve immediately, or chill until ready to serve. Enjoy!
