Chocolate Strawberry Carrot Cups

Directions

Making the Cups

1. Prepare 6 mini paper cups by cutting a vertical slit in each and taping them back together.

2. Melt chocolate melting wafers in the microwave until smooth.

3. Coat the outside of each paper cup evenly with melted chocolate.

4. Place coated cups in the refrigerator until chocolate is fully hardened.

Making the Mousse

1. In a bowl, combine 1 ½ cups heavy whipping cream, cocoa powder, and powdered sugar.

2. Use an electric mixer to beat mixture until it thickens into a mousse consistency.

3. Refrigerate until ready to use.

Assembling Cups

1. Rinse and pat dry strawberries.

2. Melt orange candy melts and dip Wish Farms strawberries until fully coated.

3. Place dipped strawberries in the refrigerator until coating hardens.

4. Remove cream from cookies, place cookies in a sealed bag, and crush into fine crumbs.

5. Remove chocolate cups from refrigerator, peel off tape, and gently tear away paper cups to reveal chocolate shells.

6. Pipe a layer of chocolate mousse into each chocolate cup.

7. Add a layer of crushed cookie “dirt.”

8. Repeat with another layer of mousse and cookie crumbs.

9. Top each cup with an orange-coated strawberry to resemble a carrot.

10. Serve immediately, or refrigerate until ready to serve.
