- 1 cup of all purpose flour
- 2 teaspoons of baking powder
- 1 cup of fresh Florida Wish Blue Berries
- 1/4 teaspoon of salt
- 2 tablespoons of granulated white sugar
- 1 large egg (beaten lightly)
- 1 cup of milk
- 2 tablespoons melted unsalted butter
- Powdered sugar
Using a large mixing bowl whisk together the flour, baking powder, salt, and sugar. Then take a seperate mixing bowl and whisk together the egg, melted butter, and milk. Next, add the egg mixture into into the flour mixture and stir until it is all mixed together. This should leave the batter with a relatively thick consistency and some small lumps. It is important to not over mix the batter or the pancakes will turn out tough.
Heat a frying pan or griddle over medium high heat. Add melted butter to the pan or griddle using a brush.
Using a small ladle pour about 1/4 cup of pancake batter onto the pan, and continue pouring seprate pancakes a few inches from each other. Let cook until they start to brown and bubbles should form at the top (~2-3 mins). Next, add Wish Farms blueberries sparingly throughout each pancake and then flip over. Cook the pancakes until both sides are light brown
Repeat with remaining batter, brushing the pan with melted butter between batches.
Serve immediately with butter and maple syrup. Optional: sprinkle a small amount of powdered sugar over the finished pancake.
Makes about 8 pancakes. Serves 3-4 people.
